These quick homemade hot dog and hamburger buns are so fluffy, delicious and extremely quick and easy to make. After making your own buns at home I guarantee you will never want to purchase store bought again.
You may or may not know, I am a sourdough enthusiast. I love all things sourdough, but I have to be honest, sometimes I just need a quick and delicious bun to go with our burger/hot dog nights.
And I refuse to purchase the junk buns off the store shelves. Even the organic buns contain seed oils and dough conditioners that I just can’t succumb to buying.
So when I need buns in a pinch and I don’t have time to make my sourdough buns, I will make these.
They are like golden, buttery pillows that make a perfect vehicle for your meat of choice.
And I promise they are foolproof. Unless your yeast is old, these are guaranteed to turn out every single time.
During the summer we enjoy a lot of grilling. And for our family parties I am always quick to offer to make these hamburger and hot dog buns for everyone. Again I just prefer to eat these over their store bought counterpart and they really take little effort to make, so a double batch for a family party can be made quickly. And everyone loves them!
Another fantastic way to use this recipe is for my Easy Oven Hamburgers Recipe. I evenly divide the dough into 24 and make mini slider buns to use for my Oven Hamburgers. We eat these all winter long and then I don’t have to pull out the grill when it’s 20 degrees outside.
So if I haven’t convinced you yet, here is one more reason to love this recipe. It freezes great! I almost always make a double batch anyways because it barely adds any more time and then I can freeze the second batch to pull out for a quick easy meal.

Ingredients to make Quick Homemade Hot Dog and Hamburger Buns
- All purpose or Bread Flour (I always recommend unbleached, organic)
- Active Dry Yeast (be sure it’s fresh)
- Slightly warmed Water (between 90-100 degrees)
- Sugar (Coconut sugar, maple sugar or cane sugar whatever you prefer)
- Melted Butter
- Egg
- Salt
- Sesame or Poppy Seeds for garnish (optional)
How to make Quick Homemade Hot Dog and Hamburger Buns
- In a stand mixer or by hand, mix together the warmed water and yeast. Allow the yeast to “bloom” in the warm water to help activate the yeast. *It is important to keep the warmed water temperature under 100 degrees so it doesn’t kill the active yeast which would ruin your recipe. A kitchen thermometer is helpful for this step. Otherwise just use your finger. If it’s a lot hotter than your body temp, it’s likely too hot for the yeast.
- Add the flour, sugar, melted butter, egg and salt mixing everything together until it no longer sticks to the walls of the bowl.
- Rest in a greased bowl, covered for 1 hour in a warm spot. *I slightly warm my oven for a few seconds and let the dough proof in there.
- Punch the dough down and divide into 10-12 even balls. *I like to make each roll the same size so I use a kitchen scale but you do you here.
To create a hamburger bun, just roll the dough into a ball, pinching off any seams. Those are simple.
But I want to show how to shape a hot dog bun. Form the dough into a 6×3 inch rectangle. Then roll the dough up starting with the long side and pinch off the seam. Always place seam side down for proof.
- Roll into round balls for hamburger buns or long skinny logs for hot dog buns (visuals above how best to shape the hot dog roll). Place on cookie sheet 3 inches apart. Let rise in a warm spot for 30 minutes.
- In a small bowl, combine egg and water and brush egg wash on top of each proofed dough ball.
- Bake at 375 degrees for 13-15 minutes until golden brown.
Can I Freeze these for later?
Yes! These buns freeze perfectly.
I love to make a double batch and freeze the second batch to pull out for a future dinner. Makes for a quick and easy meal.
To thaw simply let them come to room temp on the counter.
Or you can warm your oven to 200 degrees and place buns directly on the rack and let them thaw in the oven for 5-10 minutes.

Quick Homemade Hot Dog and Hamburger Buns

- 1/4 cup Melted Butter
- 2 Eggs (divided!)
- 1 tsp Unrefined Salt
- Sprinkled Sesame or Poppy Seeds on top for garnish (optional)
Instructions
- In a stand mixer or by hand, mix together the warmed water and yeast in a bowl. Allow the yeast to "bloom" in the warm water for 3 minutes to help activate the yeast.
- Add the flour, sugar, melted butter, 1 egg and salt mixing everything together until it no longer sticks to the walls of the bowl. *add 1 tbsp more flour if dough is too sticky OR 1 tbsp more water if dough is too dry. Should be a play dough consistency.
- Cover and rest dough in a large greased bowl for 1 hour in a warm spot. *I slightly warm my oven for a few seconds and let the dough proof in there. **Dough should over double in size.
- Punch the dough down and divide into 10-12 even balls. *I like to make each roll the same size so I use a kitchen scale but you do you here.
- Roll into round balls for hamburger buns or long skinny logs for hot dog buns. Place on cookie sheet 3 inches apart. Let rise in a warm spot for 30 minutes, again I use a warm oven.
- In a small bowl, combine the second egg and 1 teaspoon of water. Lightly brush egg wash on top of each proofed dough ball. Garnish with sesame or poppy seeds if preferred.
- Bake at 375 degrees for 13-15 minutes until golden brown.
Notes
These buns freeze perfectly. Simply thaw on the counter at room temp.
Tip: Double recipe and freeze second batch to use for a future dinner.

I’m using your recipe for your sourdough starter. I want to try ALL your recipes! I’m on day 5. I fed it today at 8:30 AM. I returned home this evening around 7:09 and it was coming out of my quart jar. I stored it and it is now about half full and still riding. I’m supposed to feed it again at 7:30. Is this normal? Lol

Just made your hot dog bun recipe. They were amazing! However my dough busted out of the bowl during 1st rise. Wasn’t expecting that! lol. Next time I make, I will freeze half of the dough for future use. We ended up with really big hot dog buns as the 2nd rise was more than I had anticipated, but they were very tasty, light and fluffy and held the condiments really well.

Only one constructive comment; you suggest you use a kitchen scale in portioning dough for buns. It would be nice to share your target weight per hotdog bun and for hamburger buns. (I rarely use volumetric measures, even for dough ingredients as weight in grams is more accurate IMHO.)

Do you think these would be good if I made them a day in advance ? Or would you freeze them for 24 hours and then thaw them on the counter ?
Also as far as heating them up goes how would you do that ? Steam them or a low oven ?

Hi Barbara. Love that you’re making so many for your church gathering. They can definitely be made a day in advance. Actually they can be made several days in advance. But they also freeze great too! I always make a double batch myself and freeze the second half to have on hand for another quick meal. You can let them thaw on the counter if you freeze them, or in the oven at 300 degrees F for about 5-10 minutes until soft. Enjoy!

I literally just made this recipe and was by far in all the recipes i tried, “the best”. I used the recipe for 5 hot dog and 5 hamburg buns. Outstanding turnout between flavour and texture. I did 16mins in my oven and 2nd rise was 45mins. I used a scale as well so buns were same weight for even baking. Definitely found my last bun recipe! 5 stars

Since retiring, I have been a full time homemaker. I’ve always made bread, and have been moving away from all pre-processed items at the store, including, mayonnaise, naan breads, fresh Currys , spice blends and much more!!! One caution to those wanting the best and freshest and best for you, buy GOOD flour, such as King Arthur, and use Himalayan salt as opposed to idolized salt. If you look at all- purpose flour, they’ve added stuff you don’t want.

Sorry about that Nancy. In step 2 under the instructions it says you can add more flour or water depending if the dough is too sticky or dry. So next time you can try adding a tablespoon more water to prevent the dough from being too dense. Hope this is helpful

Tried this one night on a whim for a burger night… total winner! I froze the remaining rolls and pulled them out for a quick sloppy Joe night before baseball- not only did they defrost quickly but they absorbed the sauce AND stayed together for our sandwiches!!
