This recipe needs more cream to egg ratio to get the silky custard texture quiche should have. Try closer to 1/2 cup of cream for each large egg. I generally use 1.5 cups of cream and 3-4 eggs. Too much egg makes it like scrambled eggs or a frittata and very dense.

Hi Leigh,
Is there a particular type of cheese that you prefer ? I’m trying to expand my cooking and have never attempted a quiche before. Thank you. Eve

I love to use cheddar or gouda. But I shred it myself with a cheese grater. The pre-shredded cheese at the store does not melt as nicely because of the anti caking agents mixed in. Enjoy!

Hi can you freeze this quiche?
